Foie gras is good for you !

"People living in Le Gers, la Haute-Garonne and the surrounding areas, where duck fat, foie gras and confit take pride of place on the dinner table , have one of the lowest rates of death due to heart disease and the highest life expectancies in the whole of France". This is what American researchers and Dr Serge Renaud - a specialist in the field - have come to term the French paradox.

Foie gras is rich in unsaturated fatty acids. They are a recommended part of our dietary intake since they help reduce the level of so-called "bad" cholesterol in the blood. This property may help explain the exceptional longevity enjoyed by people living in southwest France.
